I’m always looking for new fruit/vegetable sides that the kids actually will eat. They loved this salad, which was originally pinned from the Espresso and Cream blog. It easily can be a meal on its own, but we paired it with one of their favorite dishes — French’s Crunchy Onion Chicken. The sweet tang of the salad was a good match for the savory onion flavor of the chicken, which is embarrassingly easy to make.
For the salad, I had a honey crisp apple that needed to be used, so I chopped it up along with one pear and added it to the romaine along with Craisins and bacon. I put the feta in a dish on the side because Teen Boy isn’t a fan.
The dressing is a mix of poppy seed and balsamic vinegar. I followed blogger Madison’s recommendation for the 70-30 ratio.
We invited the grandparents over and ate this simple but tasty meal with some crusty French bread outside on our courtyard patio on a beautiful day with just a hint of fall in the air. Lovely. Rating: Company-Worthy, Teen-Approved.
